Opalka
Opalka is an open-pollinated heirloom tomato (Solanum lycopersicum) brought from Poland to Amsterdam, New York, around 1900 by the Opalka family. This indeterminate paste tomato produces medium-sized, elongated red fruits that strongly resemble peppers, suspended from vigorous vines bearing yellow blossoms and regular foliage.
Distinctive for its wispy, droopy foliage—a normal genetic trait common to elongated paste and oxheart varieties rather than an indicator of drought—the cultivar is prized for its exceptionally dense, meaty flesh and low seed count. Offering a rich and sweet flavor, Opalka performs reliably in field settings for processing into sauces and pastes as well as fresh eating.
Origin and Genetics
The Opalka tomato originated in Poland and was carried to Amsterdam, New York, circa 1900 by members of the Opalka family. Maintained across generations as a stable, open-pollinated heirloom, the cultivar preserves traditional European paste tomato genetics selected for heavy flesh and reliable fruit formation.
Botanical Profile
Opalka develops as an indeterminate vine featuring regular leaf architecture with a characteristic wispy, droopy foliage habit. This pendulous leaf appearance is a benign phenotypic trait typical of many elongated paste and oxheart lineages rather than a symptom of physiological stress or disease. The plant produces yellow flowers that set smooth, elongated, pepper-shaped fruits ripening from green to uniform red across the surface, shoulders, and interior flesh.
Cultivation
As an indeterminate cultivar, Opalka requires full sun exposure and is well-adapted for open field cultivation. Because the vines continue vegetative and reproductive growth throughout the season, standard vertical trellising or caging helps manage its growth habit and support the development of heavy fruit clusters.
Culinary Applications
Renowned for its high solids and low moisture content, the fruit interior consists of dense, meaty red flesh containing very few seeds. While primarily favored for simmered sauces, concentrated pastes, and whole-pack canning, Opalka’s pronounced sweet, rich flavor also makes it suitable for slicing, fresh table use, and drying.
