Pepper X
Pepper X is an ultra-pungent Capsicum chinense cultivar bred by Ed Currie of the PuckerButt Pepper Company in Fort Mill, South Carolina. Officially recognized by Guinness World Records in 2023 as the world’s hottest chili pepper, it produced an average pungency rating of 2,693,000 Scoville Heat Units (SHU) across multi-year laboratory tests conducted by Winthrop University.
Developed from a cross between a Carolina Reaper and an undisclosed pepper variety sourced from Michigan, the cultivar is distinguished by its gnarled, mustard greenish-yellow mature pods. The pepper’s irregular, deeply furrowed shape maximizes internal placental surface area for capsaicinoid production, yielding an immediate and severe systemic heat sensation.
Origin and Genetics
Pepper X was developed by breeder Ed Currie of the PuckerButt Pepper Company in Fort Mill, South Carolina. The cultivar is a hybrid cross between Currie’s earlier Carolina Reaper and an undisclosed pepper variety sourced from Michigan. On August 23, 2023, Guinness World Records officially recognized the variety as the world’s hottest chili pepper after extensive high-performance liquid chromatography (HPLC) verification.
Botanical Profile
The fruit of Pepper X grows in a pendant orientation and features an irregularly globose to subconical shape with prominent lobes. The exterior surface is heavily bumpy, wrinkled, and deeply ribbed with pronounced creases. Foliage on the plant is green, while the pods transition during maturation from an immature green to a distinctive mustard, yellow-green color. Internally, the morphology is structured to maximize placental tissue, which provides an expansive surface area for capsaicin gland distribution.
Heat Profile
Classified as a superhot variety, Pepper X holds a documented average rating of 2,693,000 SHU based on analytical HPLC testing performed by Winthrop University across fruit samples gathered over several years. The heat character is defined by an immediate onset, producing an intense and persistent burning sensation accompanied by systemic physiological heat effects.
Flavor and Aroma
Pepper X produces a pungent, fruity, and floral aroma. On initial tasting before the full onset of capsaicinoid burn, the pods present distinct earthy and floral flavor notes.
Cultivation
The plant requires full sun conditions for optimal growth. To safeguard intellectual property, viable seeds and fresh whole pods have not been released to the public, remaining exclusive to the originator’s managed agricultural operations.
Culinary Applications
Due to its extreme pungency, Pepper X is not consumed as a table pepper or fresh culinary garnish. It is processed primarily into fermented hot sauce mash and used as an extreme additive in commercial hot sauce formulations, including proprietary blends such as The Last Dab Xperience.
