Aji Dulce

Aji Dulce is an open-pollinated landrace and cultivar group belonging to the Capsicum chinense species, native to the Caribbean and northern South America. Also known under regional names such as Ají Cachucha and Ají Gustoso, this pepper is renowned for delivering the distinctively rich aroma of tropical chinense varieties while registering a mild heat level between 0 and 1,000 SHU on the Scoville scale.

Unlike fiery relatives such as the habanero and scotch bonnet, Aji Dulce produces small, wrinkled, lobed pods that ripen from green to bright red or orange with negligible pungency. The variety is characterized by an intensely fruity and floral aroma paired with a sweet, subtly smoky flavor profile, making it a foundational seasoning pepper and an indispensable base ingredient in traditional Caribbean sofrito.

Origin and Genetics

Originating in the Caribbean and northern South America, Aji Dulce represents a stable group of open-pollinated landraces. Morphological variations exist across regional selections throughout Puerto Rico, Cuba, the Dominican Republic, and Venezuela, where local strains are often identified by distinct names including Ajicito or Ají Cachucha. Genetically classified under Capsicum chinense, it retains the species’ classic structural and aromatic markers while naturally lacking significant capsaicinoid production.

Botanical Profile

Plants display a bushy growth habit with standard green foliage and pendant fruiting behavior. Blooms feature white to greenish-white flowers typical of the species. The pods exhibit a flattened habanero or bonnet-like shape with a lobed, wrinkled exterior and medium wall thickness. As the fruit matures, it transitions from a pale or light green to a vibrant red or orange hue.

Heat Profile

Measuring between 0 and 1,000 SHU, Aji Dulce occupies the mildest tier of the heat spectrum. When present, the sensation is characterized as a gentle, mild warming focused on the tongue. This minimal pungency allows the fruit to showcase signature chinense traits without intense burn.

Flavor and Aroma

Aji Dulce is prized for its complex aromatic profile, exhibiting strong tropical and floral aromas reminiscent of habanero chiles. The palate is defined by a blend of sweet, fruity, floral, and subtle smoky notes, offering rich depth without overwhelming spiciness.

Cultivation

As an open-pollinated chinense variety, Aji Dulce thrives in warm climates with access to full sun and well-drained soil. The stable genetics allow growers to maintain seed true to type under proper isolation practices.

Culinary Applications

Aji Dulce serves as a primary aromatic foundation across Caribbean cooking, functioning as an essential component in authentic sofrito, stews, sauces, and seasoning bases. In addition to fresh preparation, the pods are well-suited for freezing, pickling, and drying to preserve their distinctive flavor.
