Aji Fantasy
Aji Fantasy is an open-pollinated Capsicum baccatum cultivar developed in Finland by pepper breeder Jukka Kilpinen of Fatalii Seeds. The plant produces distinctive campanulate, hat-shaped pods that transition from green to bright lemon yellow as they mature on an upright branching shrub.
Unlike many intensely hot baccatum varieties, this pepper exhibits a mild to medium heat level concentrated primarily within the placenta and inner ribs. Its crisp, medium-thick outer walls remain sweet and citrus-forward, making the variety well suited for fresh applications and ornamental cultivation.
Origin and Genetics
Aji Fantasy was selected and bred in Finland by Jukka Kilpinen of Fatalii Seeds. It is a stable, open-pollinated representative of the species Capsicum baccatum. Following the success of the original yellow-fruiting line, breeders have also selected related variations, including ‘Aji Fantasy White’ (often called ‘White Fantasy’) and ‘Aji Fantasy Sparkler’.
Botanical Profile
The plant grows as an upright branching shrub with standard green foliage. In typical Capsicum baccatum fashion, the flowers display white corollas marked with distinct greenish-yellow spots.
The pendant pods are uniquely campanulate, forming a flared, bell- or hat-like crown. Fruit surfaces range from smooth to slightly undulating, with walls of medium thickness. Pods emerge green and ripen to a vivid, uniform yellow, containing straw-colored seeds.
Heat Profile
Aji Fantasy is classified as having a mild to moderate pungency. The heat is largely localized in the inner placenta and ribs, leaving the outer pericarp exceptionally mild and approachable.
Flavor and Aroma
The cultivar is prized for its crisp, sweet flesh and bright, citrusy undertones. Both the aroma and flavor are distinctly fruity, offering a refreshing, clean bite without overpowering heat.
Cultivation
This open-pollinated variety performs best when planted in full sun and well-drained soil. In addition to its culinary yield, the combination of abundant bright yellow crown-shaped fruit and spotted corollas gives the plant high ornamental value.
Culinary Applications
Thanks to its crunchy texture and moderate pungency, Aji Fantasy is widely used for fresh eating, chopped into raw salads, or diced into citrus-forward salsas. The firm, medium-thick walls also hold up well to pickling and can be preserved by freezing.
